It’s so hard to believe that Christmas is TWO days away! I’ve spent the morning getting groceries and reveling in the fact that Cleveland seemed to be abuzz with holiday spirit. Our holiday guests arrived early to beat some forecasted winter weather so my house is full of more love and laughter than usual and for that I’m considering myself to be one lucky girl.
Here’s what we’ll be eating this week :
Monday : Out. I had planned to give myself a break from dinner prep later in the week but thought what better way to start the week than by going out. It’s giving me time to focus on other things this afternoon with Christmas music blaring and snow swirling outside. Total WIN.
Tuesday : Potato Corn Chowder. I love to serve soup on Christmas Eve – especially those that can be made in the slow cooker! – as we’re usually finishing up last minute wrapping and getting ready to head to church. This is one of Andy’s mom’s favorites so I know it will be well received!
Wednesday : Spaghetti + Meatballs. Yes, for Christmas! After Camryn was born, I decided I wasn’t going to cook and all out feast for Christmas. I do it – and enjoy it! – for Thanksgiving but Christmas is all about everyone staying in their jammies and comfy clothes and drawing out the opening of gifts as much as possible. This reminds me I should share my meatball recipe soon!
Thursday : Chili Chicken Lime Burgers. Can’t get enough of these! They’re incredibly easy and packed with flavor. So easy to serve a crowd with these burgers.
Friday : Chicken and Wild Rice Soup. I had totally forgotten about this recipe until I was planning our menu for the week and digging through my cookbook cabinet. Incredibly tasty with minimal effort. How can you go wrong?
