With Valentine’s Day just around the corner, it’s time to start thinking about dinner plans! Andy and I have always elected to enjoy dinner at home. Restaurant crowds? No, thank you! In the early years of our marriage, Andy would always prepare dinner for me. Now with his crazy schedule, I’ve taken over dinner prep. If you’ll be enjoying a meal prepared at home this Valentine’s Day, consider your search for easy, romantic meal ideas over. I’ve got two recipes that will no doubt impress but won’t keep you in the kitchen all evening either!
First up? This flavor packed Parmesan Pesto Crusted Cod is a knockout main course. It’s amazing that such little prep work is involved to create such big flavor. Pesto, parmesan cheese and breadcrumbs layer to create the perfect crust atop this flaky, white fish.
As much as I love making homemade pesto, fresh basil is not abundant in February in Ohio. Or if it is, I have yet to find it. Instead, I took some assistance from Buitoni by using their Pesto with Basil, easily found in the refrigerated case on my last trip to Walmart. This main course for two requires only two tablespoons of pesto so it only makes sense to take this easy, yet flavorful, shortcut. A bonus is that I’ll have pesto leftover for another meal.
I chose to plate my fish on a bed of Buitoni linguine and zucchini noodles I created with my new favorite kitchen gadget, a spiralizer. Protein, carb and vegetable – easiest main course ever! Thirty minutes maximum to prepare from beginning to end. Your Valentine will be most impressed!
What could follow such an amazing main course? How about Red Velvet Tres Leches Cake Trifles? Individual desserts created by layering tequila whipped cream, red velvet tres leches cake, sliced strawberries and grated dark chocolate. The color of these trifles is so holiday appropriate, wouldn’t you agree?
As much as I enjoy Tres Leches cake, I don’t tend to make it often as it’s usually so time intensive. Until now! Nestle has created this amazing new Tres Leches Cake Kit that can have you baking a cake even when helping a child with homework, making train noises while playing with another child and having an impromptu dance party to the Mary Poppins soundtrack with child number three. Yes, I’m speaking from experience.
