I’m so excited to be participating in my second Sunday Supper event.  This week, the theme is Valentine’s Recipes for Two.  Thanks so much to Susan at The Girl in the Little Red Kitchen for hosting.

Friends, after eleven and a half years of marriage, I have created my husband’s ultimate dream dish.  The two key ingredients?  Beer and bacon.  I mean, really.  The aroma wafting from my oven when I pulled this Bacon Crusted Beer Mac and Cheese out likely had every guy in the 216 area code headed towards my front door.

Two individual dinner sized portions.  I can’t think of a more perfect Valentine’s Day meal for my Valentine.

Ladies, snag the ingredients for this easy mac and cheese now for a great option for dinner at home on Friday.  Believe me, you’ll enjoy it, too!

First is the ooey gooey, cheesy pasta.  The happiest macaroni you ever did see as it bathes in a sauce beer sauce with both parmesan and cheddar cheese.  The beer adds a depth of flavor that is simply unmatched by any other mac and cheese you’e experienced before.

For the beer, I chose to use a bottle of Great Lakes Dortmunder Gold, a local Cleveland beer.  This has become one of my husband’s favorites since moving here, so I considered it the perfect choice.

Now, let’s talk about this bacon crust for a moment, shall we?

This bacon isn’t some ordinary bacon.  No, thanks to mention of it in one of Michael Symon’s cookbooks, I ordered bacon online from Benton’s in Tennessee as a birthday gift for Andy last year.  It seemed fitting that I used it on this dish, my Valentine to him and his stomach.  Just don’t tell him it was the last package in the fridge.

This amazing bacon is combined with panko bread crumbs and  sprinkled on top of the cheesy pasta and then topped with an additional dusting of parmesan cheese.

Bacon Crusted Beer Mac and Cheese

Serves: 2
Ingredients
  • 2-1/2 cups macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1-1/2 cups milk
  • 12 oz. beer
  • 1-1/2 cups cheddar cheese, shredded
  • 1-1/2 cups parmesan cheese, shredded
  • ½ teaspoon smoked paprika
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ½ cup panko bread crumbs
  • 6 strips bacon, cooked and crumbled
Instructions
  1. Preheat oven to 375 degrees.
  2. Prepare pasta according to package directions, cooking 1-2 minutes less than the time noted.
  3. In a saucepan over medium-high heat, melt butter. Whisk in flour and cook until bubbly and golden in color. Whisk in milk and beer into saucepan], Stir in cheeses. Lower heat to medium and continue to stir, cooking for 5-6 minutes while mixture thickens. Stir in paprika, pepper, garlic powder, salt and nutmeg.
  4. Stir drained macaroni into sauce.
  5. Pour macaroni and sauce mixture into two single size serving dishes, dividing evenly.
  6. In a small bowl, combine panko bread crumbs and crumbled bacon. Top each dish with half of the bacon mixture.
  7. Grate additional parmesan cheese over bacon crust.
  8. Bake for 15-20 minutes. Remove from oven and let stand for 5 minutes before serving.

  7. For the man, you made a dish to win my heart! I’m curious, what type of beer did you use? The one time I made beer mac and cheese it did not go over well. Might have had to do with the fact that we only had IPA’s at home and the hops + cheese was not a good match.

      I used a Great Lakes Dortmunder Gold, a local Cleveland beer that my husband really enjoys, that’s a golden lager.

  14. Beer and bacon are definitely guy’s food.

    I’ve spent a lot of time cooking pasta and I’ve seen dozens of mac and cheese recipes, but a lot of them are technically not sound. Here’s what you got right:

    1) Undercooking your pasta in the boiling water. It finishes cooking in the sauce. Speaking of the sauce..

    2) Many recipes don’t recognize that the cheese portion of the dish is actually a mornay sauce which is just a cheese béchamel. Thank you for demonstrating the dish properly.

  26. I am making this today, as I couldn’t resist the title nor the pictures! I made this ahead and because it looks like alot I put it into a casserole dish.   28. Hi, I’m about to try this recipe but I see you forgot to say when to use the nutmeg. I’m guessing it goes in with the paprika, etc in the cheese sauce :)

  29. I made this last night, and it was amazing! I look forward to making it again and trying different kinds of cheeses. Just one issue: two servings?! I followed the recipe exactly and it was practically overflowing an 8×8 baking dish. As much add I would have loved to eat half of it, there’s no way out was a two-serving recipe! (And, of course, my husband said I should add more bacon next time!)

      I should note these are two very large servings. As in, you won’t eat anything else for the meal and even then you might not finish it! If you’re going to bake it in a single dish, a 9×13 pan might be a better bet. So glad you liked it!
