When Andy has been on a long stint of call days, I love to surprise him with one of his favorite desserts as a special treat for how hard he’s been working. This Hot Fudge Ice Cream Pie? It’s always met with an appreciative, albeit sleepy, smile. It’s one of his long standing favorites that his mom always made for him and one she included in a recipe book that she and Andy’s sister compiled for me full of recipes from family and friends when Andy and I got married.
A cold and refreshing dessert, perfect for the hottest of Summer days, although we enjoy it year round being the ice cream lovers that we are! A quick and easy vanilla wafer crust is covered in layers of vanilla ice cream and homemade hot fudge sauce. This six ingredient dessert is a family favorite and is sure to become yours, too!
Homemade hot fudge sauce?! That got your attention, didn’t it! Would you believe that if took out a saucepan and filled it with chocolate chips, marshmallows and evaporated milk and stirred it together over low heat it would become a chocolatey delight of epic proportions? Me neither! But I’m here to tell you it indeed does and is definitely the highlight of this Hot Fudge Ice Cream Pie.
Dessert with Vanilla Wafer Crust
The other two major components of this ice cream pie are vanilla wafers and vanilla ice cream. As in, you can purchase them and there is absolutely no effort involved. You simply line the bottom of your pie plate with vanilla wafers and then add alternate layers of softened ice cream and that delicious hot fudge sauce. This is one of those recipes that children love to help with as it’s so incredibly easy!
Ice Cream Pie Recipe

Hot Fudge Ice Cream Pie
Ingredients
- 1 cup evaporated milk
- 1 cup chocolate chips
- 1 cup miniature marshmallows
- 1/4 teaspoon salt
- 30 vanilla wafers
- 1 quart vanilla ice cream
- chocolate curls if desired, for garnish
Instructions
- In a saucepan over medium heat, stir together evaporated milk, chocolate chips, marshmallows and salt until completely melted.
- Line bottom and sides of 9" pie plate with vanilla wafers.
- Spread half of ice cream over wafers. Cover with half of hot fudge mixture.
- Repeat layers.
- Freeze until firm, approximately 3-5 hours.
- Garnish with chocolate curls, if desired.
