Here’s what’s on our family meal plan this week:
Meatless Monday: Mushroom and Spinach Pappardelle Pasta. Mushrooms are a great addition to meatless meals as they are an easy way to stretch and add bulk to a recipe.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Slow Cooker Apple Cider Braised Pork. This dish has be longing for the cooler temperatures of fall. Apple cider everything!
Wednesday: Chipotle Pasta Skillet. Italian meets Mexican in this delicious one skillet meal.
Thursday: Chicken Parmesan Spaghetti Pie. One of my recent favorites and one that’s so easy to create that doubling it just makes sense!
Friday: Pepperoni Florentine Pizza. Pizza is always the perfect way to kick off the weekend. Love this take on a traditional pepperoni pie.
Breakfast: Crustless Corn and Zucchini Quiche. The perfect breakfast or brunch recipe to put the remaining summer product bounty to work!
Dessert: Grape Salad. Something a bit lighter, perfect for the string of hot weather we’re having as of late.
