Here’s what’s on our family meal plan this week:
Meatless Monday: Tomato Basil Soup. Soup weather is here! What better way to start the week than with a comforting bowl of soup. And perhaps a grilled cheese on the side?
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chinese Chicken Spaghetti. A favorite of ours for years and years. Child friendly and full of veggies – winning!
Wednesday: Slow Cooker BBQ Chicken Quinoa Sloppy Joes. My slow cooker has been getting a workout the past few weeks with my oven being broken. Can’t wait to try this recipe!
Thursday: Slow Cooker Meatball Subs with Parmesan White Cheddar Queso. You had me at queso! How amazing do these subs sound?!
Friday: Bacon Cheeseburger Pizza. Pizza to start the weekend, FTW! There’s no need to decide between burgers and pizza when you can combine the two.
Breakfast: Bakery Style Blueberry Muffins. Skip the local joint and bake these beauties in your own kitchen. No one will ever have to know if you steal more than one!
Dessert: Dark Chocolate Brownie Pecan Pie. Please, please, PLEASE do yourself a favor and make this pie. Seriously the best pie that I’ve ever created.
