Before we had a child born on St. Patrick’s Day, I would indulge my husband and his love of Irish food by making him my Best Reuben Casserole each year. He doesn’t ask for much, so it was the least I could do. Now, instead of worrying about wearing something green each year, we’re blowing up balloons, wrapping gifts and attempting to make the birthday wishes of our second child come true.
This year, I thought it was time to put a spin on my husband’s love of all things reuben and created these deliciously easy Reuben Waffle Fries. Perfect for St. Patrick’s Day, game day or any day when comfort food happens to be on the agenda. Crispy waffle fries are layered with sauerkraut, corned beef, ketchup, relish and garlic horseradish before being smothered with a mountain of Swiss cheese. It all goes into the oven to warm through and until the cheese is melty and sinks into every crevice before being enjoyed with forks, fingers or whatever method you choose! The key to this cheesy goodness? The cast iron skillet! It insures that the fries stay warm and crisp and the cheese is warm and melty.
Now, I’ll admit to taking a bit of liberty with the typical reuben ingredients for my fries. For instance, the thousand island dressing? I don’t know about you, but I’m so not a fan of it. Instead, I got creative and mixed ketchup – a totally necessary fry condiment! – with pickle relish to achieve the same effect. It also acts as a great cooling agent for the bite of the Toasted Garlic Horseradish Dip that’s also drizzled over the top. This dip from Robert Rothschild Farm means business! It’s delicious as a fry dip alone which inspired this entire recipe. Without a doubt it’s the flavor that makes you stand up and take notice with these fries.
I love how incredibly easy these Reuben Waffle Fries are. I typically have most ingredients on hand and then it’s just as easy as preparing the fries as you typically would and then layering all the other ingredients on top. Something tells me that my husband will be requesting these year round!
