These Roasted Brussels Sprouts with Apple and Bacon will become a Thanksgiving dinner staple. A simple, yet satisfying, holiday - or anytime! - side dish.
Cut bacon into 1/2" pieces and arrange in a single layer on a large, rimmed baking sheet. TIP: I typically have bacon in my freezer at all times thanks to my Butcherbox subscription which insures that I always have my favorite cuts of meat on hand.
Bake until browned, about 10 minutes.
Add Brussels sprouts and add in a single layer on top of bacon. Sprinkle with salt and pepper. Roast until they begin to brown, about 15-20 minutes.TIP: When I'm short on time, I like to purchase my Brussels sprouts already trimmed and halved so I can simply open a bag and add them to my baking sheet.
Meanwhile, core and cut apple into 1/4" pieces. Remove Brussels sprouts from oven and add apple. TIP: No need to peel the apples for this recipe! Not only do they add a pop of color to this side dish, the peel adds a nutritional boost!
Stir apples into Brussels sprouts and bacon mixture to combine.
Return to oven; roast until Brussels sprouts are browned and tender and apple has softened, about 10-15 minutes.
Add vinegar to Brussels sprouts and gently stir together to combine.
