Mini Applesauce Muffins
- 1/2 cup butter softened
- 1/2 cup sugar
- 2 eggs
- 3/4 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1-2/3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Cinnamon Sugar Topping
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 4 tablespoons butter melted
Instructions
Mini Applesauce Muffins
- Preheat oven to 400 degrees.
- Grease mini muffin pan and set aside.
- In the bowl of an electric mixer, cream together butter and sugar.
- Add eggs, one at a time, until well combined.
- Stir in applesauce and vanilla.
- Add flour, baking powder, salt, cinnamon and nutmeg and stir until just combined.
- Using a tablespoon scoop, add batter to wells of muffin tin.
- Bake for 10-12 minutes or until a toothpick inserted in center of muffin removes cleanly.
- Allow muffins to cool for five minutes before removing to a wire rack.
Cinnamon Sugar Topping
- In a small bowl, stir together sugar and cinnamon.
- Dip each muffin top in butter and then into cinnamon sugar mixture.
- Best served immediately.
