Modern Irish comfort food. That’s what I’m calling this Reuben and Guinness Mac and Cheese. Pieces of thick cut corned beef and sauerkraut are stirred into a rich and gooey macaroni and cheese made with both cheddar and Swiss cheese and spiked with Guinness Beer before being drizzled with homemade thousand island dressing.
Prepare pasta according to package directions, cooking 1-2 minutes less than the time noted.
In an American Kitchen 12" Premium Stainless Steel Saute Pan over medium-high heat, melt butter. Whisk in flour and cook until bubbly and golden in color.
Whisk in milk, beer and mustard into saucepan.
Stir in cheeses. Lower heat to medium and continue to stir, cooking for 5-6 minutes while mixture thickens.
Stir in paprika, pepper, garlic powder, salt and nutmeg. Stir drained pasta, corned beef and sauerkraut into cheese sauce to coat. Top pasta with bread crumbs.
Bake for 25-30 minutes or until heated through and bubbly.
Remove from oven and let stand for 5 minutes.
Meanwhile, in a small bowl stir together all dressing ingredients.
Drizzle dressing over cooked pasta and garnish with chopped parsley.
