This Thyme Crusted Pork Roast with Soy Caramel Sauce is dressed to impress! A crust of pepper, salt and thyme envelopes the pork that is then roasted alongside baby Yukon Gold potatoes and onion wedges. A waterfall of soy caramel sauce is then poured over everything before it’s returned to the oven to finish roasting.
Rub pork roast evenly with pepper, thyme and salt.
Heat a 12" cast iron skillet over medium high heat.
Add pork roast to skillet, browning on all sides. Remove from heat and add potatoes and quartered onion around pork roast.
Bake for 50 minutes.
Soy Caramel Sauce
Meanwhile, in a small saucepan over medium heat, add water, ginger, garlic and Splenda Brown Sugar Blend. Whisk until combined.
Bring to boil and cook until mixture is reduced to approximately 1/2 cup.
Remove from heat and whisk in soy sauce, red wine vinegar, mustard and butter. Keep sauce warm over low heat.
Remove pork from oven and pour Soy Caramel Sauce over pork roast, potatoes and onion. Return to oven and bake until thermometer inserted into largest part of roast registers 160 degrees, approximately 20 minutes.
Let pork roast stand for 10 minutes prior to slicing and serving.
