These crispy Cheeseburger Chimichangas will have your eyes thinking Mexican food but the taste is all-American! Ground beef spiked with ketchup and mustard along with all of your favorite burger toppings are rolled into a flour tortilla and baked until crisp. They're then placed on a bed of shredded lettuce before being adorned with more cheese and tomatoes and drizzled with mayonnaise.

Ingredients

2 pounds ground beef
1/4 cup mustard
1-1/3 cup ketchup
8 flour tortillas
1 cup onion chopped
1 pint cherry tomatoes quartered
32 ounces sliced dill pickles
2 cups shredded cheddar cheese
16 ounces shredded lettuce
8 ounces onion rings prepared
1 cup mayonnaise

Instructions

Preheat oven to 475 degrees.
In a large skillet over medium heat, brown ground beef. Drain, if necessary.
Stir mustard and ketchup into ground beef.
To assemble chimichangas, add 1/3 cup beef filling to center of each tortilla.
Sprinkle approximately one tablespoon of onion and two tablespoons of tomato over beef and top with 3 pickle slices.
Fold two sides of tortilla over filling and roll to cover filling completely.
Place in a greased 9x13 pan and continue until all chimichangas are complete.
Spray tops of chimichangas with cooking spray and bake for 15 minutes or until golden brown.
To serve, create a bed of lettuce on a plate and top with shredded cheese. Place chimichanga on top.
Drizzle with mayonnaise and garnish with additional pickles, if desired, and onion rings.
