  • Preheat oven to 350 degrees.
  • In a medium sized bowl, add Homemade Muffin Mix, pumpkin puree, milk and butterscotch chips.
  • Stir together until just combined.
    TIP:  You only want to stir together until there are no longer any dry ingredients visible.  Over mixing will result in tough, rather than tender, muffins.
  • Using a large cookie scoop, fill each lined muffin cup with batter.
    TIP:  Using a cookie scoop insures that each and every muffin are of a uniform size.
  • Bake for 20-22 minutes or until toothpick inserted in muffin center removes cleanly.
