A cocoa infused chocolate chip cookie dough batter is bedazzled with dark chocolate chips and M&Ms candy to make these amazing Double Chocolate M&M Cookies.
Add shortening, brown sugar and sugar to bowl of an electric mixer.
Cream together on medium speed until light and fluffy.
Add eggs, coffee and chocolate extract.TIP: Not a fan of coffee? Neither am I! I promise you won’t taste it in your cookies, instead it simply deepens the flavor of the chocolate.
Mix together on medium speed until completely combined.
Add flour, cocoa, baking soda and salt.
Mix together on medium speed until almost combined.TIP: You want to still see flour within the dough before the next step. This insures that you won’t overwork the dough resulting in a tough cookie.
Add M&Ms and chocolate chips.
Stir together until just combined.
Using a medium cookie scoop, form and drop dough onto baking sheet lined with parchment paper or silicone mat.TIP: I love to use these precut parchment sheets when I’m baking to make my time in the kitchen super easy and less messy.
Bake at 375 degrees for 10-12 minutes. Allow to cool on cookie sheet two minutes before transferring to wire rack to cool completely.TIP: Want to make your Double Chocolate M&M Cookies look like they came straight from a bakery? After your cookies come out of the oven, add additional chips and M&Ms to the top of each cookie.
