These days, getting dinner on the table is something I don’t want to think twice about.  With a menu plan made each Monday, I simply prepare what’s listed on the schedule each day and keep my attention elsewhere – no last minute trips to get ingredients for dinner or figuring out as the clock strikes five what I’m going to feed my family.  These Pomegrante Chicken Rice Bowls couldn’t be easier to prepare and employ the use of a slow cooker, rice maker and microwave to get dinner on the table without a second thought.

Based on a recipe sent to me by a friend, I quickly adapted the original to use my slow cooker instead of a stovetop.  The blend of brown rice, chicken, pomegranate and broccoli?  Not only healthy, but absolutely delicious!

Pomegranate Chicken Rice Bowls


3 pounds boneless, skinless chicken breasts

1 cup pomegranate juice

1/4 agave nectar

2 tablespoons red wine vinegar

16 oz. pomegranate arils

6 cups brown rice, prepared

32 oz. frozen petite broccoli florets, prepared


Place chicken breasts in the bottom of six quart slow cooker. Add pomegranate juice, agave nectar and red wine vinegar and cook on LOW five hours.

When chicken is cooked through, remove and cut into strips.

Assembling Rice Bowls:

Combine 1 cup of chicken, 1/4-1/2 cup pomeganate arils, 1 cup brown rice and 2 cups broccoli.

Kick the guesswork out of dinner by serving these deceptively simply Pomegranate Chicken Rice Bowls.  Looking for even added flavor?  After the chicken is completely cooked, allow it to stay in the slow cooker on warm to soak up even more cooking liquid.
