Slow Cooker Huli Huli Chicken | Melanie Makes

It appears that Summer has arrived in Cleveland with temperatures in the 90s this week, including unbearable humidity.  To top it off, I turned on our AC this week and less than 24 hours later, it was obvious it wasn’t working properly.  I’ll be honest, being hot makes me very irritable.  I was willing to give Cleveland a pass on this past Winter’s weather, but the humidity?  That’s a no go.

And if there’s one thing I don’t want to do when I’m hot, it’s spend time in the kitchen preparing dinner and heating the house up by preparing something in the oven.  Instead, I love to be able to put ingredients in my slow cooker and have dinner waiting for me in just a few hours.

This Slow Cooker Huli Huli Chicken is the perfect Summer meal, prepped in a matter of minutes thanks in part to Perdue’s new PERFECT PORTIONS® Mesquite Grille Seasoned Boneless, Skinless Breasts  By using chicken that’s already been marinated for great flavor, I’m able to focus on the sauce that they’ll be cooked in.

Huli Huli Chicken is typically a grilled, Hawaiian dish but my slow cooker version keeps me inside where it’s nice and cool.  Chicken breasts slow cooked in a sauce of brown sugar, garlic, ginger and ketchup.  The end result?  Nothing short of delicious!

  1. Ugh..it’s been so humid here too! I already miss the 70 degree breezy Cape weather. I’m such a wuss when it comes to the heat. My dad had his own HVAC company and our house was always at a turbo charged 70 degrees, no matter what the temperature outside. Now, I get so grumpy in the heat! Definitely saving this recipe for one of those crazy hot days!

This was perfect last week when the humidity was out of control and our AC was out. 5 minutes of prep work? AWESOME.

this seems like what we call shoyu chicken

  3. Melanie, I love your recipes but every time you feature a Perdue product or the sauces from your other sponsor (forget name now… Raspberry salsa maker) I sigh. We don’t get any of these in Canada, unfortunately… Could you suggest a marinade recipe to use on plain chicken breast first? Thanks!

    • Hi, Beatrice -

A great point and I can definitely try to do so. For this recipe, I’d recommend using regular chicken and then cooking per the recipe instructions. I’d then keep it on warm to allow it to soak in all of the flavors until you’re ready to serve. Hope that helps!
