In my husband’s words, this is his “new favorite lasagna.” I mean, really. It doesn’t get much better than that! It’s like my Four Cheese and Spinach Stuffed Shells (minus the spinach) met a meatball sandwich and they decided to somehow spontaneously combust into a lasagna. If only everything that might spontaneously combust could have such a delicious end result!
Get on the phone. Start sending e-mails. This Four Cheese Meatball and Sweet Pepper Lasagna feeds a crowd! So much so that a typical 9×13 pan won’t be big enough for this recipe. (Don’t ask me how I know.) Instead, I had to call in the big gun, my Le Creuset lasagna pan. A perfect match. I’m in love with this pan and how much food it can hold. Perfect for my growing family and recipes like this.
The inspiration for this recipe began with my monthly series with Melissa at Lulu the Baker. Each month we use the same three ingredients to create a recipe and then share them on the same day. This month, I was in charge of selecting ingredients and selected green peppers, mozzarella cheese and pasta. Technically I cheated just a bit on this recipe as I decided to use red and yellow peppers as that’s what I already had on hand. I have no doubt that green would be just as delicious.

Ingredients
- 5 cups marinara sauce
- 12 lasagna noodles, prepared
- 4-1/2 cups mozzarella cheese, shredded
- 1 cup ricotta chese
- 1 cup cottage cheese
- 1/2 cup Parmesan cheese, grated
- 4 sweet bell peppers, julienned
- 1 Easy Baked Meatballs recipe , prepared
Instructions
- Preheat oven to 375 degrees.
- In a rectangular four quart baking dish, spread 1 cup of the marinara sauce. Top with three lasagna noodles.
- In a large bowl stir 3 cups mozzarella cheese, ricotta, cottage cheese and Parmesan cheese. Dot top of lasagna noodles with 1/3 of cheese mixture.
- Place pepper strips on microwave safe plate and cook on high for 2 minutes. Drain excess liquid and arrange 1/2 of pepper strips over noodles and cheese.
- Top with three lasagna noodles.
- Dot top of lasagna noodles with 1/3 of cheese mixture.
- Arrange meatballs on top of noodles and cheese.
- Top with three lasagna noodles.
- Dot top of lasagna noodles with 1/3 of cheese mixture.
- Arrange remaining pepper strips over noodles and cheese.
- Top with last three lasagna noodles and cover with 4 cups marinara sauce.
- Cover with foil and bake for 45 minutes.
- Remove foil and top with remaining 1-1/2 cups mozzarella cheese. Bake an additional 15 minutes or until browned and bubbly.
- Allow to stand 15 minutes before serving.
