This Barbecue Chicken Pizza Skillet Lasagna is sure to win a frequent spot on your menu plan. Diced barbecued chicken breast, red onions and cilantro are married with pasta, ricotta and mozzarella cheeses to create an amazingly flavorful one dish meal that’s ready in just 30 minutes.
Even though this week’s temperatures are in the low 30s – it’s a heat wave! – as the daylight remains a bit longer, we’re starting to think of warmer days and eating our meals gathered around our patio table. I love that our oldest daughter even said at breakfast the other morning that she couldn’t wait to eat outside again. Me too!
Her comment got my wheels turning. What do we eat outside most often? Something that we’ve cooked on the grill. Specifically something that my husband has grilled. I won’t lie, that’s totally his domain. Because of his schedule, grilling at our house typically happens on a Sunday afternoon prior to dinner.
And even though it was around 20 degrees this past Sunday, with snow covering the ground, my sweet husband indulged me in my wish for barbecued chicken and totally manned the grill to make it happen. Even if he was wearing gloves while doing so.
Something that made his delegated task a bit easier? This Evergriller Grill ‘N’ Flip Mitt from Kraft. This mitt is a specially designed, fire-resistant grilling glove that protects your hands from both the heat of the grill and the chill of the outdoors. The coolest part? The unique design of the mitt’s top allows tools to be inserted into it so the grillmaster can hold tools and keep their hand warm at the same time. Genius!
Even though I was in the mood for barbecue, I also was craving comfort food as well. Enter my Barbecue Chicken Pizza Skillet Lasagna. A combination of two of my favorite foods – pizza and lasagna! – but with the authentic summer time flavor of barbecue stirred in. Friends, this is a new favorite that I can see us enjoying year round. This month, Kraft is celebrating the launch of a newly revamped line of barbecue sauces with recipes that feature high-quality ingredients like tomatoes, sweet molasses, cider vinegar and cane sugar. I thought that the Kraft Original Barbecue Sauce was absolutely perfect for this dish, but can’t wait to give the others a try as well!

Ingredients
- 1 pound barbecued chicken breast, diced
- 1 cup diced red onion
- 4 cloves garlic, minced
- 24 ounces marinara sauce
- 1 cup barbecue sauce
- 2 cups water
- 13.25 ounces pasta
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- 1/2 cup chopped cilantro
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a 12" skillet over medium heat, add chicken, onion, garlic, marinara, barbecue sauce and water and bring to a boil.
- Stir in pasta and simmer for 10-12 minutes or until pasta is cooked al dente.
- Preheat broiler.
- Remove skillet from heat and stir in mozzarella cheese.
- Place dollops of ricotta cheese on top of pasta mixture and place skillet under broiler until cheese begins to brown.
- Garnish with chopped cilantro and Parmesan cheese, if desired.
