The first day of March?! That means we’re getting very close to welcoming this baby to the world. This pregnancy has gone by at super sonic speed and I feel so behind on things. Not such a good thing for an OCD planner such as myself. At least I know what we’ll be eating this week which makes that part of our life a bit easier as we continue to check things off our to-do list.
Here’s what we’ll be eating this week:
Meatless Monday: Huevos Rancheros Waffle Fries. Anything with a runny egg is winner in my book! I actually make this dish with scrambled eggs for the menagerie and they think it’s a special treat.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Meatball Stroganoff Pot Pie. Definite comfort food on what’s supposed to be a crazy rainy day which should make for quite the mess with all the snow that we have on the ground.
Wednesday: Enchilada Casserole. One of my absolute favorites, especially when paired with a baked potato.
Thursday: Creole Pasta Soup with Cornbread Croutons. I mean, really. Cornbread croutons? Do I have to say anything else?
Friday: Blueberry Balsamic Chicken Meatball Pizza. Love the chicken meatballs on this pizza and how they add substance but aren’t as heavy as a typical beef meatball.
