If you took a peek in my fridge sometime in the last few weeks, you’d see that it is stuffed full of fresh fruits and vegetables as we’re trying to eat a bit healthier. Especially those of us who have 13 pounds of baby weight left to lose. I’ve been all about the dark leafy greens, fresh fruit and lots of protein.
The week before last, I might’ve gotten a little carried away when I spied an amazing deal on strawberries. I knew that it was likely we weren’t going to be able to eat them all before they started to go bad so into a recipe they went! Specifically these Strawberry Lemonade Scones. They really should be called something like “Stuffed with Strawberries Lemonade Scones” for the large amount of fruit that is folded into the batter. The more the merrier, right?
And as I’ve been trying to eat protein at every meal and snack, I decided to add even more strawberry flavor to these treats by using Silk Dairy-Free Yogurt Alternative. Made from the goodness of plants instead of dairy, Silk Dairy-Free provides 6 grams of soy protein per serving, with no cholesterol. I swear if you pull the lid back on the packaging it smells just like fresh strawberries. So good!

Ingredients
- 5.3 ounces Strawberry Silk Dairy-Free Yogurt Alternative
- 1/4 cup milk
- 1 tablespoon vanilla
- 1 lemon
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons sugar + additional for topping
- 1/2 cup butter, cut into small cubes
- 2 cups sliced strawberries
- 1 egg, beaten
- 1 cup powdered sugar
Instructions
- Preheat oven to 375 degrees.
- In a small mixing bowl, whisk together Silk Dairy-Free Yogurt Alternative, milk, vanilla and zest of lemon. Set aside.
- In a larger bowl, stir together flour, baking powder, salt and 6 tablespoons sugar. Using your fingers, crumble butter into flour mixture until it resembles coarse crumbs.
- Stir the wet ingredients into the dry ingredients until just combined. Fold in sliced strawberries.
- Turn dough out onto a lightly floured surface and pat into an 8" square. Cut dough into 8 rectangles and transfer to a baking sheet lined with parchment paper or silicone mat.
- Brush the top of each scone with beaten egg and sprinkle with additional sugar.
- Bake for 25-30 minutes or until scones are beginning to brown and are cooked through.
- Allow scones to cool 10 minutes on baking sheet before removing to cooling rack to cool completely.
- In a small bowl, whisk together juice of lemon and powdered sugar. Drizzle over each scone prior to serving.
The hardest part of making these Strawberry Lemonade Scones? Allowing them to cool once you take them out of the oven so you can add the delicious lemon sugar glaze. They’re simply irresistable and just begging for you to take a bite!
