Grab yourself a glass of milk, that’s just what these Buckeye Blondies call for! A peanut butter blondie base is studded with chocolate and peanut butter chips before being slathered with a dark chocolate ganache, a sinful peanut butter ganache and then drizzled with even more chocolate ganache.
When people learned that we were moving to Ohio almost three years ago, nearly everyone of them mentioned that we would turn into Buckeye fans. Clearly they don’t know me that well, as my blood most definitely runs black and gold for my love of my alma mater. Don’t get me wrong, it’s been fun to witness their national championship run last year from a few hours away, but you won’t find me sporting scarlet and gray anytime too soon.
There’s only one buckeye that has stolen my heart and that is of the sweet candy variety. Have you ever had one? Buckeyes are similar to peanut butter balls but they’re dipped in chocolate, leaving a circle of peanut butter visible on the top so that they resemble an actual buckeye that you’d find off of a tree. They are delicious and oh so addictive! A friend sent me a basket of them when we arrived in Cleveland and I may or may not have eaten more than my fair share before sharing with the rest of my family.
Before Ohio State played Notre Dame in the Fiesta Bowl this year, my friends at the Ohio Poultry Association asked several Ohio food bloggers to create a Buckeye inspired recipe that could be served at watch parties. I was more than happy to say yes and that’s how these Buckeye Blondies came to be. My first blondie recipe! Now typically blondies are similar to brownies but without the addition of chocolate. You can see why I haven’t ever created one before – I puffy heart chocolate! But Buckeye Blondies?! Now we’re talking – chocolate and peanut butter lovers, this one’s for you!

The third layer of these bars is a sinful peanut butter ganache that’s then drizzled with even more chocolate ganache. The end result is four layers of deliciousness, perfect for game day or any day of the year.

Ingredients
- 10 tablespoons butter
- 2 cups brown sugar
- 2 tablespoons molasses
- 1 cup peanut butter
- 2 eggs
- 2 teaspoons vanilla
- 1/2 teaspoon salt
- 2 cups flour
- 1 teaspoon baking powder
- 1 cup peanut butter chips
- 1 cup dark chocolate chips
- 3/4 cup heavy whipping cream
- 2 cups dark chocolate chips
- 3/4 cup butter, softened
- 3/4 cup peanut butter
- 1 teaspoon vanilla
- 3 cups powdered sugar
- 2 tablespoons milk
- 6 tablespoons heavy whipping cream
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 325 degrees.
- In the bowl of an electric mixer, cream together butter, sugar, molasses and peanut butter until light and fluffy.
- Add eggs and vanilla and mix until combined.
- Add flour, salt and baking powder and mix until just combined.
- Stir in peanut butter chips and dark chocolate chips.
- Press batter into a greased 9x13 pan and bake for 25 minutes or until just set.
- Cool completely.
- In a microwave safe bowl, add whipping cream and chocolate chips.
- Microwave for one minute and whisk together until combined.
- Pour on top of cooled blondies and smooth into an even layer.
- Refrigerate until set
- In the bowl of an electric mixer, cream together butter and peanut butter.
- Add remaining ingredients and mix until well combined.
- Spread evenly over chocolate ganache layer.
- Refrigerate until set.
- In a microwave safe bowl, add whipping cream and chocolate chips.
- Microwave for one minute and whisk together until combined.
- Drizzle over top of blondies.
I’d like to think that my Buckeye Blondies played a small part in Ohio State steamrolling Notre Dame in the Fiesta Bowl. I mean, these bars have four layers of decadence and a football game has four quarters. Coincidence? I think not!
