Now, more than ever, I’m needing to find the easiest way to get dinner on the table for our family. Just yesterday I made a trip to Home Depot to get moving boxes, went and found a storage unit to hold some of our belongings until moving day – both trips with the littlest two – and also ran my daily mama shuttle service to school and swimming lessons. When we got home, luckily dinner was ready and waiting for us thanks to my Slow Cooker Honey Mustard Pork Tacos with Candied Bacon. It not only takes away a bit of the stress of trying to get us moved across the country but is also packed with flavor. A definite win/win in my book.
This is one of those toss everything in the slow cooker and forget about it type of recipes. Don’t you love those? Me too! A pork loin roast, onion and garlic as well as a secret flavor filled ingredient are added to the slow cooker and then left to cook for the rest of the day. When cooking is complete, the pork is shredded and then loaded into a tortilla with the usual taco suspects of lettuce, cheese and tomatoes. The first taste of these Slow Cooker Honey Mustard Pulled Tacos, however, is anything less than usual.
My secret ingredient might sound a bit bizarre but is absolutely the star of this recipe and what helps to make it so incredibly easy to prepare. It’s Raspberry Honey Mustard Pretzel Dip from my friends at Robert Rothschild Farm. There’s a reason why this stuff gets rave reviews and continues to win awards. It’s nothing short of addicting. A bit of sweet from the raspberry combined with the tangy heat from the mustard and all combined into a sticky dip that melts into each crevice of pork when warmed.
The Raspberry Honey Mustard Pretzel Dip is the perfect compliment to my Slow Candied Bacon which also plays on the sweet and spicy flavor combination. The bacon utilizes brown sugar, mace and red pepper flakes and it also lends texture to the tacos as well with the satisfying crunch that only bacon can have. Even better? The bacon is a completely hands off recipe and can be made in advance which makes this meal even easier to prepare.
- 3 pound boneless pork loin roast
- 1 onion, diced
- 4 cloves garlic, minced
- 13.5 ounces Robert Rothschild Farm Raspberry Honey Mustard Pretzel Dip
- 1 recipe Slow Candied Bacon, prepared and crumbled
- shredded lettuce, diced tomatoes, shredded cheese, cilantro and tortillas
- In a six quart slow cooker, pork loin roast, onion and garlic. Pour 1 cup of Raspberry Honey Mustard Pretzel Dip over pork.
- Cook on LOW 8-10 hours or HIGH 4-6 hours.
- Shred with forks into bite sized pieces. Stir in remaining Raspberry Honey Mustard Pretzel Dip.
- To assemble tacos, layer shredded lettuce, pork, candied bacon, cheese, tomatoes and cilantro into a corn or flour tortilla. Top with additional Raspberry Honey Mustard Pretzel Dip, if desired.
