Who’s counting down the days until Thanksgiving? As our 20-month old says, “Me! Me! Me!” Thanksgiving is my absolute favorite and I’ve had my stack of holiday recipes past, present and future on the counter for weeks now. My menu is pretty solid but as I was perusing a super old issue of Everyday Food – remember that gem? – I suddenly had an urge to add a new side dish to the equation. Congratulations, Glazed Pearl Onions. You’ve earned a spot on the 2016 Thanksgiving menu. I’m wondering if they expect an award or medal of some sort?
Pearl onions are one of my husband’s favorite things. When I toss them into a recipe, I imagine he does a happy dance of sorts. In his head of course, because I’ve yet to see his 6’4″ frame break out in a dance of any sort. These Glazed Pearl Onions are not only absolutely easy but they also use up little bits of this and that that are leftover from preparing other holiday dishes. The onions come from the frozen foods section as I wouldn’t wish anyone the torturous task of peeling miniature onions. And the small amounts of thyme and chicken broth? Ingredients
- 3 14-ounce packages frozen pearl onions
- 4 tablespoons butter
- 1/2 cup chicken broth
- 3 tablespoons brown sugar
- 2 teaspoons red wine vinegar
- 1 teaspoon fresh thyme leaves
Instructions
- In a large skillet, combine onions, butter, broth and sugar; bring to a boil.
- Reduce to a simmer, and cook over medium-low, stirring occasionally, until onions begin to soften and liquid has evaporated, approximately 15 to 20 minutes.
- Add 1/4 cup water, and cook until onions are glazed, about 10 minutes more.
- Remove from heat, and stir in vinegar and thyme.
- Garnish with thyme sprigs, if desired.
