after a week away, it’s back to menu planning + a much needed grocery trip!
monday : leftovers. delicious stuff leftover from our easter dinner yesterday. grilled steak, glazed carrots and grilled potatoes.
tuesday : chicken dumpling soup. our high tomorrow is supposed to be in the low 40s. sounds like soup weather to me!
wednesday : hawaiian sweet potato skins. from the april/may issue of clean eating. i picked up the latest issue and think that i’m needing to subscribe already.
thursday : pizza. i think my pizza craving is back…
friday : salsa chicken nachos. andy said we haven’t had these in awhile – maybe two weeks? – so back on the menu they go. an easy start to the weekend.

new recipe review from two weeks ago :
sweet + spicy chicken. this one was super easy. or rather, i made it super easy. the original called for using chicken leg quarters and i subbed chicken breasts. the original also called frow browning the chicken first. so not going to happen. instead i used frozen chicken breasts and put them directly in the slow cooker. great results that everyone seemed to enjoy. smelled fantastic as well!
sloppy joe grilled cheese sandwiches. hello comfort food! i needed to make more holes in the bread for the cheese to ooze out when on the griddle, but otherwise it was a great first try. will definitely try again.
