another successful menu last week. we’ve been eating much healthier and this busy mama has been enjoying the leftovers at lunch. one less thing to to make equals less stress. especially when hungry tummies are involved.
here’s what we’ll be dining on this week :
meatless monday : chipotle, sweet potato, black bean + guac tacos. a pinterest find. since making another batch of sweet potatoes for carson last week, i’ve enjoyed them myself for lunch several days. they’ll now be starring in tonight’s dinner.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : slow cooker beef and tomato stew. andy’s pick from last week that we didn’t get to. i had made one grocery run but didn’t get everything i needed and then didn’t get back out in the subzero temps with the kids in tow.
wednesday : bbq chicken pizza soup. i’m going to attempt to make this a slow cooker recipe. with three little ones around during the witching hour that usually is when i’m trying to make dinner, putting something together while at least one of them is napping makes my life infinitely easier.
thursday : crockpot mexican stuffed peppers. camryn’s pick for the week. we’ve had these once before and i love that you don’t have to brown the beef for the inside of the peppers prior to putting them in the slow cooker.
friday : garlic pesto chicken with tomato cream penne. i had put this on our menu back in november but never prepared it. when i asked leighton what she wanted for dinner this week, she requested fajitas. since we just had it last week, i asked for a reselection. she then told me she wanted regular chicken with cheese. i’m not quite sure what that is, but hopefully this fits the bill.
recent recipe reviews
crockpot picadillo. first, you can tell what kind of day i was having when i made our menu last week when i listed this as a meatless meal. this recipe calls for two pounds of beef. so definitely NOT meatless. this crockpot meal was a bit more involved than i usually like. i try to stay away from slow cooker meals that involve cooking before putting everything in the slow cooker. seems to defeat the point. i served this over israeli couscous and everyone enjoyed it. it wasn’t out of this world, but it was good.
crock pot italian sloppy joes. another, good, but nothing outstanding meal. i think the sandwich filling would be better as a calzone filling. the hit of the meal was the kale chips which camryn inhaled. she’s already requesting them again for a snack.
crock pot chicken enchilada soup. this was very similar to a soup that i’ve made before so we enjoyed it. obviously i wasn’t looking too close at the recipe when i was menu planning last week.
