hello monday. another week to tackle. more boxes to pack. preparing to get our house listed. and did i mention my beloved crockpot is out of commission? the one i just purchased a month ago to replace the one i broke “into a million pieces” as told by the two year old? it has a hairline crack in the bottom which is allowing liquid to get in between the crock and the heating element. not good. luckily the company is sending me a new one. i also have a back-up crockpot as well. whew!
here’s what we’ll be eating this week :
meatless monday : pancakes. leighton’s pick for the week. an easy thing to whip up and something that everyone, including the baby, can eat. score. and hey, at least she’s decided to pick something other than mac and cheese which has been her pick for the last two weeks.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : crockpot honey sesame chicken. i got an e-mail last week from carron that her family had tried this and it was a hit. i immediately repinned and added it to this week’s menu.
thursday : chicken and white bean enchiladas with creamy salsa verde. i’m raising a foodie! this was camryn’s pick for the week after i let her look through my pinterest board. she loves white beans so we’re going to give this a try. love that she’s willing to try anything.
friday : beef and noodles. andy’s selection for the week. i put the roast in the crockpot for the day and then use frozen egg noodles. the perfect comfort food before i put him to work for the weekend. he’s got a to-do list three days long.

bbq chicken pizza soup. yum! i successfully made this into a crockpot recipe and will post my version in the near future. tasted just like eating the pizza and between three adults, there wasn’t anything left for my lunch the next day. boo!
chipotle, sweet potato, black bean + guac tacos. telicious! (when leighton wasn’t pronouncing her d’s correctly, we all adopted this phrase.) we ended up eating this for lunch on saturday and it was awesome. the honey was the perfect addition to this dish and paired so well with the chipotle. will definitely add into our meatless monday rotation – or any other time for that matter. i thought it might be a bit spicy for the girls, but they didn’t make any comments so it was a win for everyone! but then again, it’s always a win when there’s guac around in my book.
