a few meals got bumped from last week’s menu plan which made drafting this week’s menu easier than planned. after packing close to 20 boxes last week in preparation for listing our home and our big move, i’ll take easy when i can get it!
here’s what we’ll be eating this week :
meatless monday : cinnamon baked french toast. the two year old carb queen is back with a breakfast pick again this week. i’ve made this dish regularly for the past six months or so and it’s perfect for house guests as you can do everything the night before.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chicken and white bean enchiladas with creamy salsa verde. when menu planning last week, i forgot to take into account that we usually get a heart shaped pizza for valentine’s day. this got bumped so it’s back on the menu for this week.
wednesday : beef and noodles. another bump from last week. we’re supposed to get snow later this week. a perfect night for comfort food. when my mom made this when i was younger, we always had blueberry muffins with it. recently, i thought it was a bit of an odd pairing – even though it’s always my favorite part – until reading in my new whole grains cookbook that blueberry muffins weren’t always so sweet and were often served alongside roast meat dishes in years past. camryn loves blueberries and i buy a pint for her each week to eat with meals and snack. note to self to buy an extra pint so we can have muffins!
thursday : turkey meatloaf. andy’s request for this week. a recipe orignally passed along by my amazing friend gabby in 2006. you know it’s good when i’m still making something that i was making years ago. i’m notorious for not making the same thing twice!
friday : crockpot chicken taco chili. another new recipe i’m trying from gina. i’ve become such a fan of her recipes and can’t wait for her cookbook to hit shelves!

crockpot honey sesame chicken. everyone ate it and enjoyed it, but i wasn’t wowed by it. i actually switched things up a bit and served it as more of an asian style bowl with a brown rice mixture, broccoli slaw and then the chicken. love the extra crunch the veggies added
