it seems that a couple of recipes always get bumped due to our ever changing schedules, but that’s just another advantage of menu planning. i then have meals for additional days than originally planned. no problem at all.
meatless monday : quinoa + black beans. one of the recipes we didn’t get to last week. looking forward to trying it tonight as it got rave reviews from a friend last week.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : beef + broccoli. the second recipe that got bumped last week. another new one that i’m hoping we can add to our rotation.
wednesday : turkey stuffed peppers. peppers were on sale and i originally bought them for skillet stuffed peppers but then remembered i had recently pinned this recipe. opting for the healthier route even though i’m getting the evil eye from my husband for doing so.
thursday : honey sesame chicken. this looks good! and it appears we’re going for a week full of new recipes. no complaints here!
friday : pizza. thanks to papa john’s i have a coupon for a free pizza that needs to be used. an easy way to end the week.

country club chicken. finally got this one one the table! it got a thumbs up from all four of us + my sister-in-law who joined us for dinner that night. i actually could’ve eaten it without the chicken as it makes a LOT of food.
