typing today’s date gave me a bit of nostalgia as february 25th was my due date with camryn. it was also a monday. not that it mattered much as she didn’t arrive for a couple more weeks. this week is going to be a chaotic one at best. our house goes on the market, we find out about schools for the girls, well baby check-ups on top of the usual weekly schedule. the theme of our menu plan this week is EASY.
here’s what we’ll be eating this week :
meatless monday : pancakes. if you read my menu plans with any regularity, you can guess who requested this one. i made a rule that you can’t request the same meal every week, there has to be at least one week in between. we had pancakes two weeks ago and the crafty carb loving two year old figured out she could request them again and i couldn’t say much about it. i use a variation of a recipe from cook 1.0 – so glad i purchased that book when it first came out as it’s no longer in print but one of my favorites.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chicken and white bean enchiladas with creamy salsa verde. can you believe i still haven’t gotten to this one? the third time is the charm. we were set to have this on saturday, in fact, the chicken was already cooked, when andy was taking a huge load of boxes over to the storage unit so it was going to but a kink into our schedule. we opted to pick something up instead so i hope we’re enjoying enchiladas for dinner tomorrow. finally!
wednesday : chicken and wild rice soup. from one of my newer cookbooks, this makes a large amount which is awesome as the leftovers for lunch the next day are even better!
thursday : chipotle black bean burgers. a super easy meal paired with a side of fruit. i picked these up from costco on a whim a few trips ago and love them for a quick lunch or dinner when i too much on my plate. no pun intended.
friday : turkey fried rice. andy’s request. we had this for the first time about a month ago and not only is it easy to put together, but it’s super flavorful as well.
recent recipe reviews
crockpot chicken taco chili. at first i thought this was really similar to the chicken enchilada soup recipe of hers that we had a few weeks ago, but after a few bites, i decided i enjoyed this more. thick and hearty and you just throw everything in the slow cooker and go. it makes a lot and everyone enjoyed it. even leighton ate every last bite both for dinner and lunch the next day. i served it over brown rice blend and also ate it by itself and enjoyed it either way. great topped with a spoonful of plain yogurt!
