our menu for last week kind of fell by the wayside midweek. we ended up listing our condo on wednesday and andy went out of town that same day for the rest of the week to a conference. with lots of activity on the real estate front, in addition to our every day schedule, i’ll admit i caved when the girls requested peanut butter and jelly for dinner one night.
here’s what we’ll be eating this week :
meatless monday : chipotle, sweet potato, black bean + guac tacos. we first had these a month ago and i’m excited to have them again this week. such an amazing flavor combination.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chicken and white bean enchiladas with creamy salsa verde. yes. this has been on our weekly menu for now four weeks… i am determined to finally get this dish made!
wednesday : grilled cheeseburger wraps. i first introduced this meal to our family late last year. a perfect quick meal as we finalize birthday plans for the next day.
thursday : steak. as requested by the soon-to-be five year old for her birthday dinner. she is her father’s daughter. daddy will be manning the grill which gives me more time to whip up a cinderella birthday cake.
friday : thai basil coconut lentils. you know who i think is going to love this new recipe? the baby! he loves lentils and squash. did i mention he eats as much as his sisters?
