menu planning on the fly this am as i was up late last night – or really early this am. we spent so much of the weekend outside enjoying the nice weather – finally! – that i still had many things on my to-do list. so between midnight and 1a, i was in the kitchen making these :

grape caterpillars for leighton’s last turn at preK snacks today. she won’t see them until it’s time to eat so i hope she enjoys them! their theme for the week is gardening so they’re enjoying these and some veggie flowerpots (small clear cups) with yogurt dip and carrots and celery.
here’s what we’ll be eating this week :
meatless monday : princess night. a local restaurant is having “princess night” and the girls have been obsessed with the idea for the last week and a half. so i get the night off from cooking and we’ll be eating meatless later this week. a win/win.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chicken avocado salad. it’s supposed to be 80 degrees! i’m sure we’ll be outside most of the afternoon so my plan is to make this during naptime and just pull out when we’re ready to eat. heck, we might even dine out on the deck! hoping this pinterest find doesn’t steer me wrong.
wednesday : crockpot chicken and barley stew. cold weather returns. lucky us! spring, you’re such a tease. i seriously am trying this based on the fact i have barley i need to use in my pantry. although i love all her recipes.
thursday : turkey meatloaf. we haven’t had this in a couple of months and andy mentioned it over the weekend. yum!
friday : oven baked chicken fajitas. man i love these. really need to jot down my version of them.
new recipe review
zucchini, black bean and rice skillet. let’s just say that i have a 2+ minute video of my middle child in hysterics about this meal and leave it at that, shall we? seriously ridiculous. apparently she decided on the night this dish was served that she wasn’t a fan of zucchini and refused to eat it. our house rule is that you have to take a bite of everything. if you don’t like, not a problem. maybe your taste buds will like it when they have a chance to grow up a little. BUT, if you doctor up your food with salt or pepper, it’s yours to finish. of course, she doctored up her food and then refused to eat it. so she was served it again for lunch the following day – more hysterics – and then again at dinner. i told her repeatedly she could pick the zucchini out after she had one to no avail. the irony of it all? after i picked them out, she deemed it “telicious!” and ate every last bite.
with that being said… this was an okay dish. super bland in my opinion as i added siracha to mine to give it some flavor. likely won’t make again.
