continuing to work on cleaning out pantry and freezer items as we prepare for the big move. wonder if my husband will notice that there are three meatless meals planned for the week…. shhhh!
here’s what we’ll be eating this week :
meatless monday : southwestern black bean, quinoa and mango medley. found this from a menu plan back in september. hello spring! even better, i think we’ll dine out on the deck as the two youngest tend to make quite a mess with quinoa. hooray for not being on my hands and knees to clean up the mess!
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : grilled cheeseburger wraps. didn’t get to these last week so back on this week’s menu they go!
wednesday : slow cooker sweet and spicy chicken. i was planning on another sweet and spicy chicken recipe i found over the weekend but really wanted a slow cooker meal for the week so this version will have to do. i’ll likely make with chicken breasts instead as i have some on hand already.
thursday : pasta w/ marinara sauce. love the sauce from my cook 1.0 cookbook. we haven’t had just plain ‘ol spaghetti in a while. i think the menagerie will be all smiles when dinner time rolls around.
friday : edamame + veggie fried rice. i was thinking of adding turkey fried rice to our menu for the week but know i have a bag of edamame in the freezer that needs to be used. perfect!
new recipe review
omg chicken. this ended up being my mother’s day meal. it was good, but i made it with chicken breasts instead of cutlets. next time i’ll make it with cutlets so that the chicken is even more flavorful. i also subbed greek yogurt instead of mayo and added some lemon juice, garlic powder and italian seasoning.
