less than three weeks until moving day so getting an actual menu planned is proving to be a bit more difficult. getting the freezer and pantry cleaned out needs to stay a priority!
here’s what we’ll be eating this week :
meatless monday : breakfast for dinner. i’ll be honest and admit that my children totally had donuts for breakfast. i surprised the girls with donut holes on friday morning for breakfast from trader joe’s – a definite treat! – and there were more to be eaten. not wanting them to go to waste, they had a second breakfast. they also had yogurt and fruit, so there was a healthy portion of the meal.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chipotle chicken taco salad. i’ve had this on my mind for the past couple of weeks and i’m finally getting it on the menu!
wednesday : lemon chicken. ugh, i need to get this recipe written down for you. so easy and a healthy dinner for all.
thursday : dinner with sara. SO excited about this. most days i think we were separated at birth. can’t wait to meet her adorable family.
friday : herb marinated flank steak. i’m going back to my friend the sonoma diet. a lifestyle choice that i’ve veered from after getting pregnant with carson. this is one of the recipes in the book that we’ve had before. so good.

easiest crockpot salsa verde chicken. it seriously was the easiest and was absolutely delicious! i served it in tortillas topped with tomatoes – and shredded cheese for the menagerie. definitely will be making again.
