another week, another menu plan. enjoying all of the awesome leftovers for lunch the following day. perfect for after we’ve been out running errands or i don’t have a lot of time to spend getting lunch together.
here’s what we’ll be eating this week :
meatless monday : spicy black bean stuffed peppers. the five year old requested stuffed peppers this week. consider it done! this is a new recipe but contains ingredients that everyone loves so we should be good to go!
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chicken avocado salad. i bought a bag of avocados last week at costco and it made me think of this recipe. i made this once before and really enjoyed it. i omitted the onion and likely will this time as well. raw onion in this just seemed like an odd choice to me.
wednesday : lentil and brown rice tacos. a few weeks ago, i asked if anyone had a great recipe for lentil tacos and a blog reader – thanks, erin! – shared this link. meatless and budget friendly? hope it’s awesome!
thursday : cheesy chicken orzo. a pinterest find and new recipe for us this week. my three littles are mac and cheese fanatics so i have little doubt they’ll enjoy this as well.
friday : pizza. we love beginning our weekend with pizza. little time and prep involved makes it the perfect end to our week.
