this morning i have a bit of a birthday hangover, i dropped the oldest off at camp for the morning and the baby appears to think that taking a nap is optional. it’s all kinds of awesome at our house! with a month left of summer vacation, there’s lots of things to accomplish between now and then.
here’s what we’ll be eating this week :
meatless monday : breakfast for dinner. it’s monday and i’m going to be honest and say i’m taking the easy way out on dinner today. i’ll let the menagerie choose if they’re rather have pancakes or waffles. paired with a smoothie, we’ll call things good.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : easiest crockpot salsa verde chicken. everyone loves this one and really what could be easier than putting chicken breasts – direct from my freezer, thankyouverymuch – and a bottle of salsa verde into my slow cooker for dinner? try this, you’ll thank me later.
wednesday : thai chili peanut meatballs. we had these a few weeks ago but i changed things up a bit and loved them even more than usual. instead of serving on rice, i served them on a bed of spaghetti. think lo mein like. al dente noodles and meatballs covered in a delicious peanutty, coconutty sauce? yes, please!
thursday : chicken caesar burgers. a new recipe for us this week. both andy and i love caesar salads and kristin has never led be astray. happy to get this one on the men last minute.
friday : pizza. the perfect kick-off to our weekend. i have many projects slated to get done over the weekend – yes, already – so it’ll be a busy one!
new recipe reviews
lentil and brown rice tacos. a definite hit! i might actually prefer it over the usual taco filling! so easy and i usually have all ingredients on hand. have no doubt that this will be on our menu again very soon.
cheesy chicken orzo. a complete hit with all three of the menagerie. i almost tripled the recipe – 2.5 times used the complete box of orzo – and there was barely enough left to make a lunch serving for another day. super cheesy and comforting.
