it’s hard to believe that we have just two weeks before school starts – crazy! hopefully we’ll be enjoying lots of time out in the sunshine and that means minimal dinner prep for mama.
here’s what we’ll be eating this week :
meatless monday : three cheese skillet lasagna. a new recipe for our family. my little carb lovers will love this, without a doubt.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.

tuesday : apricot basil chicken salad. nothing says summer like a chicken salad sandwich! this one has such a bright flavor with the unexpected basil note at the finish.
wednesday : oven baked chicken fajitas. andy’s selection for the week. i’ve said it before, but this is probably our most enjoyed recipe that i’ve found on pinterest. yum!

thursday : asian bbq turkey lettuce wraps. these haven’t been on our menu for far too long. little prep work means you’ll be sitting down to dinner in no time.

friday : pizza. a pie made with the perfect pizza crust and paired with a salad on the side. hello, weekend!
