The first menu plan of September? I’m still i denial that summer is over. The girls have two days off of school this week so it’ll be a nice way to ease back into early morning alarm clocks.
Here’s what we’ll be eating this week :

Meatless Monday : Orzo and Black Bean Salad. I can’t get enough avocado these days and this is such an easy dish to pull together while we attempt to get some house projects done.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday : BBQ Chicken and Pineapple Quesadillas. We love pineapple and I particularly love the combination of pineapple and heat. This is a new recipe for us, can’t wait to give it a try!

Wednesday : Skillet Burgers. A Twitter follower told me last week that her 16-year-old son said this was a “meeeeeeean sloppy joe.” A definite compliment! We haven’t had these for a while and they’ll make a great easy dinner this week.
Thursday : Three-Cheese Skillet Lasagna. A pasta dish on our menu each week insures three happy little ones at my dining room table. I’ve made this once before and there was hardly enough left for lunch the next day.
Friday : Pizza. This Perfect Pizza Crust is why I always keep break flour on hand. It makes for a super speedy lunch or dinner and it can be customized no matter what your taste in toppings.
