WHEW! Last week was a busy one! Two weeknights with evening activities and I was gone over the weekend as well. I’d say I hope this week will slow down but I know that it’s not really a possibility. Swimming lessons for the littlest two get added to our weekly schedule and we have house guests coming at the end of the week. I think I’m tired already!
Here’s what we’ll be eating this week :

Meatless Monday : Chickpea Ratatouille. Andy has mentioned chickpeas a few times in the last couple of weeks and this recipe couldn’t make for an easier start to our menu plan for the week.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday : Pasta with Crock Pot Bolognese Sauce. I’m always up for a new pasta sauce and Gina has yet to steer me wrong with one of her recipes. I plan on browning the meat the night to alleviate the hassles of doing it the day we’ll be eating the sauce.

Wednesday : Raspberry Honey Mustard Pretzel Crusted Chicken. I love how I can pull the rest of this meal together while the chicken bakes. The mix of salty pretzel and tangy honey mustard? Perfect.
Thursday : Homestyle Chicken and Noodles. Hello, comfort food! The weather is turning cooler and I love how rustic this dish is.

Friday : Pizza. It wouldn’t be Friday without pizza made with the most Perfect Pizza Crust. Note to self, I need to buy another pizza pan as menagerie’s appetites are growing and two pizzas are now needed for dinner for the five of us.

Angel Hair with Tomatoes and Garlic. From Michael Symon’s new 5 in 5 cookbook. Awesome AND so easy to put together. Everyone enjoyed it and 4 out of 5 of us had seconds. I enjoyed eating what little was left for lunch the next day. Definitely will make again as I usually have most ingredients on hand.
