*SIGH*
What a long week last week. The usual plus making brownies and a cake for the girls’ school family festival – recipes coming soon – and I’ve had a headache the last three days. Woe is me, right? Needles to say, I’m ready for a fresh start this week.
Here’s what we’ll be eating this week :

Meatless Monday : Yogurt Waffles. We haven’t had breakfast for dinner a few months. Time to change that! I love to double – or even triple! – this recipe and freeze the rest for an easy breakfast option any day of the week.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday : Brown Sugar Glazed Pork Chops. I made these once before and really enjoyed them. That speaks volumes as I definitely don’t consider myself to be a pork chop type of gal! Looking forward to trying these again.

Wednesday : Skillet Burgers. Also known as homemade sloppy joes. We’ve been enjoying these with sweet potato fries the last few times I’ve made them.
Thursday : Crockpot French Dip Sandwiches. I was perusing some of my old menu plans and came across these. My husband will no doubt declare it the best day ever when he sees what’s on his dinner plate.

Friday : Pizza. Nothing better than a pie with the Perfect Pizza Crust!
New Recipe Review from Last Week
Angel Hair with Corn, Feta and Tomato. A fresh tasting pasta dish, but it wasn’t overly big in flavor. With that being said, we still ate every last bite of this dish. Camryn and Carson enjoyed the leftovers later in the week as well. On a side note, my husband the feta cheese hater didn’t even realize what he was eating and guessed mozzarella. I knew it!
