It’s another short school week this week due to parent/teacher conferences. Since we accomplished absolutely zero house projects this weekend – UGH – I’m hoping that an extra day and a half at home will allow me to cross some things off my never ending house to-do list. Here’s to wishful thinking!
Here’s what we’ll be eating this week :

Meatless Monday : Black Bean Tostadas with Corn Relish. The temperature today is supposed to be 60 degrees. I’m considering this dish my farewell to the warm temps as I spied a snowflake in the forecast for later in the week.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday : Crockpot Buffalo Chicken Lettuce Wraps. A new recipe to try this week and I’m already looking forward to it! Buffalo Chicken that’s reasonably healthy? Sign me up!
Wednesday : Three Cheese Skillet Lasagna. For my little carb lovers. All of us enjoy this quick, one pan dish. There’s rarely any leftovers.

Thursday : Thai Chicken and Coconut Soup. Warm and comforting and a lovely change of pace from the typical slow cooker soup.

Friday : Pizza. Nothing better than a pie with the Perfect Pizza Crust! Even if we don’t have pizza on Friday, I love having all the ingredients on hand as it makes an easy meal no matter what night of the week it may be.
