still dieting, but the food is SO GOOD. we’re eating so many veggies and i’m proud to say i’ve yet to let anything from our weekly CSA box go to waste thus far. that’s an accomplishment! we’re eating all the dark green, leafy veggies that we should be. kale, chard, beet greens…
meatless monday : spaghetti with roasted tomatoes and pinenuts. i must have played around with spaghetti recipes too much in the recent past as now when we have it, C asks me if we’re having “regular” spaghetti or not. comments aside, she deemed this delicious and her daddy and i agreed. L wasn’t a big fan but she also didn’t nap well so i’m not going to blame her poor attitude at the dinner table on dinner itself.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : wraps. i usually make the girls quesadillas or a sandwich or whatever C happens to request and andy and i make our own wraps and watch “the voice” together after they go to bed. our weekday date night of sorts.
wednesday : indian-style curried chicken. seriously. everything i’ve made from this cookbook has been absolutely amazing. we’ve yet to find something we haven’t liked. both andy and i have come to enjoy indian food since moving here.
thursday : teriyaki beef spirals. don’t they sound delicious? thursdays also happen to be CSA box pick-up day and i’m always motivated to use things then and there so i don’t have to process them and then try to find room for them in the fridge as well. pretty much the reason behind why i was sauteing beet greens last thursday.
friday : pizza. with lots of veggies.

last week’s new recipe review :
grilled beef with chimichurri sauce. i had intended to make grilled five spice flank steak but used some of the ingredients i needed for another dish earlier in the week. oops! instead, i found this recipe and loved the combination of sauce and meat. absolutely delicious.
