i hate to plan our weekly menu last minute before trying to grocery shop. it stresses me out. and i know that that’s a crazy thing to admit. but that’s what i did this morning. as the girls were cooking in their play kitchen, i was figuring out what we were going to eat this week.
meatless monday : curry-tomato sauce with whole wheat spaghetti and chickpeas. from the latest issue of rachel ray’s magazine. they just redid the magazine design and at the moment, i can’t say i’m a fan. not as easy of a read as the previous design. serving this with some fresh from the oven bread. yum!
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : reuben bake. i owe this dish to my husband as before we had a baby with a st. patrick’s day birthday, this was what i’d make him for that holiday. so he’ll just be getting it a month or so late.
wednesday : nachos. i’m already looking forward to this. yes, nachos really make me that happy.
thursday : coke cow. a recipe from my very first online scrapbooking friend who i still think the world of. we haven’t had this in forever. my husband will be one happy guy to see this on the menu.
friday : pizza.

new recipe reviews from last week
tomato minestrone soup with garlic bread croutons. it was fine. nothing out of the ordinary, nothing too spectacular. neither of the girls cared for it which surprised me because it’s really just noodles and vegetables. i don’t see myself making this one again.
chicken marbella. so very easy to put together and a great way to use chicken drumsticks. L really liked the chicken and likely had two legs worth of meat. C liked it the day we had it but “couldn’t like it” when i tried to give her leftovers. i’m keeping this one in the to try binder and giving it another go round in the future.
