Le sigh. Thanksgiving has come and gone all in the blink of an eye. It was more of a success than I could’ve hoped and every dish turned out great. I utilized an electric skillet, electric roaster, toaster oven and two slow cookers to cook our dinner and everything turned out a-okay.
Now it’s back to a somewhat normal routine as the hustle and bustle of Christmas draws near.
Here’s what we’ll be eating this week :

Monday : Potato Corn Chowder. A nice, hearty bowl of comfort to start the week. Sounds like a good idea to me!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!

Tuesday : Barbeque Chicken Hash. A quick and easy dinner that’s on the table in no time and brings the tastes of summer with it.
Wednesday : Loaded Philly Cheesesteak Baked Potato. My husband will likely fall over when he see’s this on his dinner plate as he’s such a meat and potato type of guy.
Thursday : Slow Cooker Chicken Parmigiana Sandwiches. A Pinterest find from last week that I saw making the rounds. I can’t see any reason why it won’t be a success.
