menu plan monday : 4.4.11.

one look at our calendar for the week and it looks to be a busy one.  swimming lessons, soccer practice, call schedules – actually that's about every week.  if spring ever arrives and allows us to be outside it'll definitely improve my outlook for the week!

meatless monday : tomato minestrone soup with garlic bread croutons.  [new recipe] i can't believe how much more i actually take a look at recipes i've torn out of magazines now that they're all in a binder i can flip through.  this is one such recipe.  can you really go wrong with garlic bread?

i've selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment.  my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal.  what can i say, i'm nice like that.

tuesday : tacos.  an ode to the girls' aunt cuckoo.  during her last two visits, she's taken C to taco bell for lunch.  just the two of them.  you'd think that she was being wined and dined with as much as C goes on and on about going in and eating "sitting on chairs."  each time we go by the restaurant, cuckoo is always the topic of conversation.

wednesday : baked potatoes.  it's funny how i can eat this for lunch other days of the week and still look forward to it for dinner.

thursday : chicken marbella.  [new recipe] a perfect way to utilize some chicken pieces in the freezer.

friday : pizza.

chicken in a pot with garlic.  hello yummy bread!  and the chicken was good, too.  my first go at cooking a whole chicken.  couldn't have been easier.  will definitely do it again soon!

shepherd's pie.  we finally found something that L won't eat.  neither of the girls care for mashed potatoes – which still baffles me – but they both decided to opt for something else for dinner.  surprisingly, i rather enjoyed the meal, especially with the extra veggies that this recipe included.  i'll make it again, but will serve it for just andy and i next time.
