
I’m in total denial that Christmas is next week. Even though we’ve got enough holiday activities on our calendar for four families, for some reason, I’m thinking I have more time to prepare than I do. Please tell me I’m not the only one!
Here’s what we’ll be eating this week :

Monday : Black Bean Tostadas with Corn Relish. Mexican food sounds so good right now – especially with avocado! These tosadas are simple and quick. The perfect reentry dinner to a busy week.
Tuesday : Loaded Philly Cheesesteak Baked Potato. We had these a few weeks ago and everyone loved them. Want to try them with chicken instead of beef this go round.

Wednesday : Chili Chicken Lime Burgers. A new recipe that I posted last week. These are seriously amazing and couldn’t be easier. I’m hoping to make extra and put them in the freezer for the ultimate in quick and easy dinners.
Thursday : Slow Cooker Balsamic Shredded Beef. A new to us recipe that we didn’t get to last week. Looking forward to it!

Friday : Pizza. Nothing better than a pie with the Perfect Pizza Crust! Even if we don’t have pizza on Friday, I love having all the ingredients on hand as it makes an easy meal no matter what night of the week it may be.
