last week’s attempt at not going grocery shopping? success! i need to shop my pantry more often.
meatless monday : lentil burritos. super easy. i love that i can double the filling and put the extra in the freezer for an even easier meal in the future. the last time i made these i was able to make the filling, assemble the burritos while the girls napped and simply warmed them through at dinner time. all i need to pick up for this meal is tortillas. perfect!
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : slow cooker artichoke pasta. [new recipe] i’ll likely add chicken to this for andy and for L to have as a protein.
wednesday : leftovers. the middle of the week seems to be the perfect time to make sure that leftovers don’t take over the fridge.
thursday : swiss chicken casserole. it’s one of those dishes that we have every so often that everyone enjoys and i simply find it so so. the fact that i can simply throw everything in the crockpot makes it a winner in my book.
friday : pizza. hello weekend!
