
After an activity filled first week of spring break, I’m ready to take it easy on our second week off of school. We have a few play dates scheduled but otherwise I’m hoping to stay close to home and get a few things crossed off my to-do list. We’ll see what actually happens.
Here’s what we’ll be eating this week:
Meatless Monday: Black Bean Toastadas with Corn Relish. One of my favorite meatless meals. So easy and full of flavor. There couldn’t be an easier dish to start the week with.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: One Pan Green Chile Chicken Enchilada Pasta. A Pinterest find as I was making this week’s menu. One dish enchiladas? Count me in!
Wednesday: Easy Chicken Pot Pie. It’s supposed to snow this week. The end of March. Somehow the words snow and spring break just don’t seem to go together. So we’re continuing on the comfort food train. If one thing can make the infinite winter more bearable, it’s this chicken pot pie!
Thursday: Peperoncini Beef Sandwiches. Andy’s request for the week and the easiest slow cooker meal ever invented. Two ingredients into the slow cooker and dinner is started.
Friday: Pizza. The perfect way to kick off the weekend, especially when we’re expecting house guests for more birthday celebrations. A pizza party it is!
