looks like it'll be another hot + steamy week here. i think i said that just a week or so ago, didn't i? i find preparing dinner getting a bit trickier these days. L still takes a little catnap around dinner which is nice when i'm prepping things. then i have miss C underfoot – and that's usually when a meltdown occurs for some reason or another or she's being insanely loud to wake up L's said catnap. and L is now eating cereal for that feeding. whew! sometimes just thinking about dinner is exhausting!
but then i have to remind myself how much more sane i feel if i know what we're having for dinner and i can do some of the prep work during nap time.
meatless monday : black bean zucchini quesadillas. this looks to be something that i can easily pull together and puts to use some of the black beans i cooked a few weekends ago and some fresh zucchini from last week's csa box. my only worry might be what my husband will say when he finds out what's on the menu. when i asked him if he had a meatless dish he preferred to eat on monday let's just say he gave me a look like i was crazy. i have no doubt that C and i will enjoy these though.
tuesday : italian chicken with chickpeas. apparently in 2006 when i made this, we enjoyed it. another reason i love my recipejournal, i'm able to keep track of dishes we've tried, even four years ago.
wednesday : thai chile peanut meatballs. we must have this each month it seems and august is still young. this was andy's requested meal for the week and i'm happy to oblige.
thursday : sundried tomato and caper pasta. every time i'm on her site, i've wanted to try this one but was missing something. this week, it's a go!
friday : pizza. i love that we have this tradition. a perfect start to the weekend.
new recipe review from last week | lemony pasta with wilted arugula and spinach
another easy meatless recipe. i upped the amount of greens in the original recipe, probably much to the chagrin of my husband and daughter. a perfect seasonal dish for summer. i must've had a thing for lemons when i was planning last week's menu as the other new recipe i tried also had a lemon type dressing.
new recipe review from last week | greek pasta salad
i love making a big bowl of pasta salad for C and i to nosh on during the week. especially that it includes lots of veggies, cheese (a protein) and C's favorite, noodles. i wasn't sure how she'd react to this one as it was a bit different but she was all for it. even the feta cheese. the only thing she didn't eat was the cucumbers. i'm not quite sure why she won't eat them, but i keep trying. definitely will be making this one again in the future. love the tasty dressing and how easy it was to put together during nap time.
