Here’s what we’ll be eating this week:
Meatless Monday: Roasted Cumin-Lime Eggplant Quesadillas. The temperature today is supposed to reach 74. SEVENTY FOUR! That’s definitely something to be excited about, especially as the girls have the day off of school. I see lots of playing outside in our future so this easy, yet delicious, dinner to start our week sounds perfect.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Rosemary Citrus Shrimp Tacos. I can’t believe how popular this recipe has been! It has to be one of the most easy recipes I’ve ever created and the end result speaks volumes. It’s packed full of flavor!
Wednesday: Chicken with Roasted Lemons and Green Olives. I love how lemons can brighten a dish so easily! And when roasted? They bring a whole new element to this one pot meal.
Thursday: Thai Chile Peanut Meatballs. One of our most favorite slow cooker meals. We haven’t had this in awhile so it’s time to bring it back out. Instead of rice, I’ve been serving it on top of spaghetti as of late.
Friday: Movie Night. One of the best traditions we’ve started for our family is a movie night every other Friday. We gather around on the living room floor and enjoy a picnic of popcorn, cheese, fruit and some type of sweet treat. Such a great way to start our weekend.
