it’s july. it’s hot. put those two together and you’ll see i’m not doing a whole lot of cooking with the oven this week. once again, crockpot i adore thee. however i am making three new dishes this week. hoping that doesn’t haunt me.
meatless monday : heuvos rancheros. i made two large batches of black beans this weekend to put in the freezer and realized i hadn’t made these in awhile. (by cooking dried beans it’s less expensive and creates less waste than buying cans.) i’m thinking i might try and put it in quesadilla form for C to enjoy.
tuesday : asian shredded beef. not exactly sure how i’m going to serve this, but i think it could be a hit so we’re going to give it a whirl.
wednesday : easy crockpot lasagna. we haven’t had lasagna in a while and this appears to be an easy way to make it for the week.
thursday : thai style chicken legs. i have chicken legs in the freezer and this sounds like a perfect way to put them to use!
friday : pizza. i really wonder why i even note this day on my menu as i already know what we’ll be having.
what i didn’t make last week | cherry pecan chicken salad
apparently there is a shortage of cherries because of poor growing conditions at the moment? needless to say when i was advised of the situation, we had a change in plans. i also had realized that i had planned this meal for the night of my birthday. is it bad that i’m an adult and requested mcdonald’s for my birthday dinner?
